The Ingredients
300g Free-range Chicken (土鸡)

15g Astragalus Root (黄芪)

3 Red Dates (红枣)

Steps
Purifying the Base
Cut chicken into large pieces. Blanch in boiling water for 3 minutes, then rinse so the broth tastes clean.
Slow Simmer
Place chicken, astragalus, and dates in 1.2L filtered water. Bring to a boil, then reduce to a very low simmer for 90 minutes.
Stabilization
Discard the astragalus roots (fibrous and non-digestible). Season with a minimal amount of sea salt. The soup should be rich, yellow-tinted, and slightly sweet from the dates.
